Mexican Rice

Steps

  1. Drizzle a large saucepan in oil and heat to medium-high heat. Add rice to pan and cook, stirring frequently for 10 minutes
  2. Add all of the other ingredients to the saucepan, stir
  3. Bring to a simmer, then cover the pan. Lower heat to low, and cook for 30 minutes
  4. Move off heat and let sit, still covered, for 10 minutes. Fluff rice with a fork, and serve
