Mexican Rice
Ingredients
- small habenero pepper (1 diced)
- green bell pepper (2 sliced lengthwise)
- carrots (3 sliced into discs)
- yellow onion (1/4, diced)
- diced tomatoes (1 18oz can)
- long grain rice (1 1/2 cups)
- water (3 cups)
Steps
- Drizzle a large saucepan in oil and heat to medium-high heat. Add rice to pan and cook, stirring frequently for 10 minutes
- Add all of the other ingredients to the saucepan, stir
- Bring to a simmer, then cover the pan. Lower heat to low, and cook for 30 minutes
- Move off heat and let sit, still covered, for 10 minutes. Fluff rice with a fork, and serve
